Southern Highlands Olive Oil (SHO)

Southern Highlands Olives (SHO)  grown at Diamond Creek Estate

The Southern Highlands produces some of Australia’s finest Extra Virgin Olive Oil.

The Olive Grove is planted equally with three distinct and complementary olive varieties.

Barnea, a tall, slim fast growing species from Israel, renowned for its high quality oil.

Manzanillo, considered to be one of Spain’s finest cultivars for both table and olive oil.

Mission, widely grown in California, said to have been brought to the

USA by the Franciscan monks, produces both table and olive oil.

The combination of these three olive oil varieties combines to form a unique and exquisite blend of high quality olive oil.

The 1250 olive trees in the olive grove were planted in 1997.

The Mission trees flank the white grape vineyard blocks, forming a Shield shape.

All three varieties occupy the northern slopes below the Cabernet Sauvignon vineyard block.

The fruit is harvested entirely by hand late in the season.

The olives are cold pressed within hours and yield a soft, fruity and herbaceous oil that retains a degree of peppery spice.

The Good Oil

Extra Virgin Olive Oil is full of anti oxidants and a wonderful healthy alternative to more processed dairy fats.
